    1. 150g dried spaghetti
    2. 8 large raw shell-on king prawns
    3. 2tsp rose harissa
    4. ½ a bunch of flat-leaf parsley (15g)
    5. 1 lemon

    Method:

    1. Cook the pasta in a pan of boiling salted water following the packet instructions.
    2. Peel the prawns, removing and reserving the heads while leaving the tails on. Make a small incision along the back of each prawn to butterfly them. Toss the prawns with rose harissa and marinate briefly.
    3. In a large frying pan, fry the prawn heads in olive oil until golden all over, occasionally stirring and gently squashing for added flavor.
    4. Roughly chop the top leafy half of the parsley and set it aside. Finely slice the parsley stalks and add them to the pan with a pinch of sea salt and black pepper. Fry for a minute, then add the marinated prawns and cook for one minute per side.
    5. Using tongs, transfer the cooked pasta to the pan. Squeeze in half of the lemon juice, add the parsley leaves, and toss together. If needed, loosen the pasta with a splash of starchy cooking water. Discard the crispy prawn heads before serving and accompany the dish with lemon wedges for extra tang.
